A New outfit!



Diesel got his first outfit last week and surprisingly I was not the one who bought it for him. He got it on Wednesday and sadly it almost doesn't fit him anymore. He is growing so fast these days and it makes me so sad! He is averaging about an inch taller and an inch longer each week! He now weighs almost 18 pounds and before long I am not going to be able to even pick him up anymore.

Hi!

Here are the recipes:
Black Bean and Corn Salsa
1 pkg. frozen sweet white corn
2-3 cans black beans-drained and rinsed well
1 green pepper
tomatoes
1 bunch cilantro diced
2-3 avacados
1-2 Good Seasons Italian Dry Seasoning packet (mix with oil, vinegar and water on pkg. directions)
Mix seasoning packet(s) and set aside. Combine all ingredients but avacado in large bowl. Pour dressing mix over top. Don't add avacado til ready to serve. Stays good in fridge for about a week.
Hint: I used the whole 2 pkgs and it was pretty gooey. Maybe 1 or 1/2 would be better.

Chicken Salad
3 C. Diced Cooked Chicken
2 Tbs. Lemon Juice
1 tsp. salt
Sprinkle chicken with lemon juice and salt and chill several hours.

Add: 1 1/2 C. diced celery
1 1/2 C. Seedless grapes, split
3-4 sliced green onions

Dressing: 1 C. Miracle Whip
3/4 tsp. Mustard
1-2 Tbs. Sugar
1/4 C. Light Cream (half and half)
Blend well. Pour and toss salad. Just before serving stir in 1 cup slivered almonds. Garnish with mandarin oranges. Makes 6- 1 cup servings.

I looked at that blog and I had to look twice....that couldn't be Diesel because he was HUGE. In just 2 weeks he grew that much?/!!??!! You're in for it! We'll miss you while we're gone and still wish you could come out for awhile...think about it??
